Farfalle with Sausage, Peas and Mushrooms

My family enjoys any kind of pasta but they love the sauce-less pastas the best.  They also like shaped pasta shells and in this dish I used farfalle also known as bowtie pasta.  Quick and easy meal that your family will enjoy as well.

Farfalle with Sausage, Peas and Mushrooms

Serves 4 (if you have a larger family like I do, I just double everything)

1 pound of Italian Sausage, casings removed ( I like to use both sweet and spicy)

3/4 tsp sea salt, plus more to taste

3/4 tsp freshly ground black pepper, plus more to taste

1 (10 oz) package frozen peas, defrosted slightly

In a large saute pan, heat 2 tbs of the olive oil over a high flame.  Add the sausage and saute until golden brown, breaking up any large clumps.  Using a slotted spoon, transfer sausage to a plate and set aside.

Heat 2 more tbsp of oil in the same pan.  Add the garlic and mushrooms and 1/2 tsp of salt and pepper.  Saute until all the liquid from the mushrooms is evaporated, about 8 minutes.  Add the peas and saute for another 2 minutes.  Return the sausage to the pan and cook until sausage is heated through and flavors have blended.

Meanwhile, bring a large pot of salted water to a boil.  Add the pasta and cook, stirring occasionally, until al dente.  Drain the pasta, reserving 1/2 cup of the cooking water.  Return the pasta to the pot and add the meat mixture.  Toss over medium heat to combine and heat through.  Add enough of the reserved cooking water to moisten, and heat for about 5 minutes.  Remove the pan from the heat.  Add the Parmesan cheese and toss to combine.  Transfer to a large bowl and serve.  We serve with salad and garlic bread.
